IKAT Raw is a 100 % unroasted cacao from jungle-grown Trinitario and Forastero cacao on the volcanic island of Flores, Indonesia.
Grown among mango, nutmeg, vanilla, banana plants, and dense jungle vegetation, this living ecosystem shapes a bright, fruit-forward profile with gentle acidity and subtle spicy depth.
Fermented in banana-leaf-lined teak wood boxes and sun-dried under gentle temperature control, the cacao is processed without roasting, remaining raw, pure, and fully expressive of its origin.
